Bodacious BBQ Wings
4 lbs. Jumbo whole chicken wings
¼ cup Ted's World Famous BBQ Bone Dust BBQ Rub
2 bottles Sleeman India Pale Ale
½ cup + 2 tbsp. orange juice concentrate (the frozen tins of concentrated you just
add water to)
4 cloves garlic, minced
1 tsp. minced ginger
1 tbsp. chopped fresh cilantro
2 green onions, minced
3-4 hot red chili peppers, minced (Thai Red Bird Chili)
1 tsp. salt
½ tsp. ground black pepper
1 cup Ted's World Famous BBQ Beerlicious BBQ Sauce
2 tbsp. honey
1 tbsp. butter
Special Equipment: BBQ Grilling Basket
- Form each chicken wing into a triangle by tucking the wing tip under the drummette segment of the wing. Season each wing with Bone Dust BBQ Rub pressing the spices into the flesh.
- In a bowl combine the Sleeman India Pale Ale, ½ cup orange juice concentrate, garlic, ginger, cilantro, green onion, chili pepper, salt and black pepper.
- Place wings in a glass dish and pour mixture over the wings. Cover, refrigerate and marinate for 4 to 6 hours or overnight.
- In a microwave safe dish combine 2 tablespoon of the orange juice concentrate with Beerlicious Sauce and honey. Heat in microwave on high for 30 seconds, stir and continue to heat on high for another 30 seconds. Remove from microwave and stir in the butter, stirring until the butter melts and incorporates into the sauce.
- Preheat grill to medium, 350-450 degrees F.
- Remove wings from marinade, discarding the left over marinade, and place wings into the BBQ Grilling Basket.
- Grill wings for 30 to 45 minutes, turning every 3 to 5 minutes. Baste with reserved Beerlicious sauce mixture during the last 10 to 15 minutes of grilling, until the wings are fully cooked and crisp.
- Carefully remove wings from basket.
- Toss with any remaining glazing sauce.
- Serve with your favourite ice cold Sleeman beer.
